If it's not your home currency there's really no need to bring American dollars with you to Cuba at all, let alone actively pursue changing your Canadian dollars or other currency into USD prior to your trip.
This is because (at the time of writing) there is a 10% penalty applied against the exchange of any American money you decide to change in Cuba.
You should be able to use credit and debit cards from major financial institutions at any reputable hotel or resort. But you may also seek an authorized currency exchange point after you arrive to change whatever amount of cash you feel is comfortable to carry for day to day use.
