I could not recommend visiting the small city of Orvieto more. I loved experiencing this enchanting destination, it’s perched on a rock in Umbria and it is incredibly scenic. It has old cobbled streets, family run restaurants, and beautiful unique buildings...I really felt like I was in a movie.

Pretty sure this is where @Gene wants to retire!
Yes @Shy Orvieto is my favourite hilltop town. I've been there 4 times and always spend a few nights there. It's very special to me as well as my family. There's so many nooks and crannies to explore. And the food and wine is always exceptional. And the locals are so friendly. I especially enjoy long walks early morning or at night when the "tourists" have all left and there's a wonderful calmness.
Oh wow, that is quite the church! @Gene
What's your go-to cheese when in Orvieto?
I think the photo you are referring to @Shy is from a local butcher, Il Negozietto, that serves a prosciutto with cheese on a crusty panini. I don't have a fave cheese, I just take their suggestion and have never been disappointed.
How's your Italian, @Gene? How do you communicate when you're there to get the best cheese recommendations?
